I store, use, and like all three. Cutting onions is one of my least favorite jobs, so my THRIVE onions come in handy often. Here is bit about them:
Freeze Dried White Onions
These are tiny (very tiny) dices. I love using them when I want a bit of onion flavor, but no chunks of onion. I use them in my enchilada sauce and alfredo sauce etc. To get the most flavor, “stir fry” these dry for just 10 seconds or so before adding other ingredients. They hydrate extremely quickly. Each #10 can holds the equivalent of approximately 25 small onions meaning you are paying around $0.70 / onion. They have a 25 year unopened shelf life and a 1 year opened shelf life.
Dehydrated White Onions
These are definitely diced, but are not as small as the freeze dried version. They work well in soups etc where you want a bit of onion texture and not just flavor. In my opinion, they have just a bit less flavor than the freeze dried version. I still “stir fry” them dry before adding other ingredients to maximize their flavor. They also hydrate quickly, though not quite as quickly as the freeze dried version. Each #10 can holds the equivalent of approximately 30-35 small onions meaning you are paying around $0.40 / onion. They have a 25 year unopened shelf life and a 1 year opened shelf life. Imagine…..storing 35 onions in your house that never go bad!
Freeze Dried Green Onions
These are just like fresh green onions, and I use them in the exact same way except I don’t have to chop them! You should know, however, that these green onions only include the green part of the onion. There is none of the white bulb. Each #10 contains the equivalent of about 25-30 bunches of onions. That means you are paying about $0.50 / bunch! But even once opened, these last for 1 year! They have a 25 year unopened shelf life.
