Simple Coconut Macaroons

These coconut macaroons are moist and chewy on the inside and pleasantly crisp on the outside.  But surprisingly, that isn’t the best part.

The best part is that they are as simple as simple gets to make.  They only require two ingredients: Thrive’s macaroon mix and water!  That means:

  • No need for shredded coconut plus 4-8 other ingredients
  • No separating eggs
  • Make 30 or make 3….whatever suits your mood!

Every time I’ve shared these macaroons with friends and family over the last four years, I’ve been asked for the recipe.  I always have to giggle just a bit as I say, “just add water and bake.”

This really is a fantastic little mix to have on hand for last minute dinner invites.  “I’d be happy to bring dessert” will be much easier to offer!

You could even dress them up a bit by adding fruit (dried cranberries would be delicious) or almonds and chocolate for a homemade almond joy.
