Asparagus is a favorite vegetable in our house. My husband and I LOVE it, three of our four kids enjoy it, and one tolerates it. That is a win in my book! This Creamy Garlic and Asparagus soup recipe was a hit. The original recipe can be found on page 26 of Our Best Bites Savoring the Seasons cookbook. I simply converted it to work with 100% shelf stable ingredients. That way, I can shop my “home store” instead of the grocery store and enjoy this delicious soup anytime: even when asparagus is too expensive to buy!
Gather your ingredients.
Add butter powder, flour, bouillon, and garlic powder to pot over medium high heat.
Add oil and mix well. Continue stirring until mixture just barely starts to brown.

Add water while whisking until mixture is completely smooth.
Add onions and asparagus to pot.
Bring to a boil, then reduce heat and simmer for 10 minutes, stirring occasionally.Use an immersible blender to blend soup until smooth. You can also remove soup from pot and pour into a regular blender, blend, and then pour back into pot. If I had no power, I’d use this blender.
Mix instant milk powder with water, and then whisk into soup.
Add bechamel powder and allow soup to simmer over low heat until thickened (about 2-3 minutes).
Serve it up and enjoy!

- 1/4 cup [url href=”https://simplefamilypreparedness.thrivelive.com/milk-powder.html” target=”_blank”]instant milk powder[/url]

I don’t have the béchamel powder. Would flour work as a substitute?
No, but equal parts cornstarch and water should. It will thicken the soup, but not add the flavor the bechamel would.
